It’s time. It’s time to put the slow-cooker in the basement and scrub up the grill. It’s time to break out the tongs and sing M-A-R-I-N-A-D-E in falsetto. People, it’s officially summer. People, it’s time to grill.
I should preface this post with the fact that: The grill is never a one man show.
There’s a lot more than you think that goes into a great grilled meal. There’s the grill > That’s key.
The griller > He’s the secret ingredient. And to any ingredient > there’s always a secret.
And the inspiration for my Balsamic and Honey Chicken Skewers recipe > it was delivered to my door.

One of the smart ways they pimp their samples is to include a Tasting Guide, where they deliver intel about the boxed samples, the artisans who created them plus unique recipe ideas using the products included. Yep, all in a really great designed package. I’m such a sucker for packaging.
This month’s Hatchery box included one of my favorite specialty brands, O Olive Oil. This sample was for their Fig Balsamic Vinegar. It’s balsamic with a big dose of figs, my favorite Meyer lemons, blood orange and Tahitian lime. Yep, it’s goooood.
And that’s when my mind started spinning.
With chicken ideas. With balsamic. With the grill. Done and done.
Welcome summer. Nice to see you again.
- 1 pound boneless, skinless chicken breasts, about 2 breasts
- 2 tablespoons balsamic vinegar
- 1 tablespoon extra virgin olive oil
- 1 clove garlic, minced
- 3 tablespoons honey, divided
- 1 teaspoon fresh rosemary, minced, plus more for garnish
- kosher salt and freshly ground black pepper
- Gather 3-5 wooden skewers and place in a shallow plate with water for 30 minutes.
- Trim the chicken breasts of any extra fat. Cut into 1 inch chunks and set aside.
- In a medium size mixing bowl, whisk the balsamic vinegar, extra virgin olive oil, garlic, 1 tablespoon honey and 1 teaspoon rosemary plus a generous pinch of kosher salt and freshly ground black pepper. Add the chunks of chicken breast and refrigerate for 1-2 hours.
- Preheat the grill to high. Thread the chunks of chicken onto the wooden skewers.
- Spray the grill with non-stick cooking spray or olive oil. Reduce the heat to medium-high. Cook the chicken for 3-5 minutes on each side, basting the chicken with the remaining honey. Continue turning until chicken is cooked though, about 10 minutes or until chicken is opaque.
- Let sit for 2-3 minutes and serve. Drizzle with more honey and fresh rosemary if you'd like.
